4 Slices of Thick Cut Bacon, cut into 1” strips
1 Medium Yellow Onion, chopped
2 Cans (15 oz. each) Yellow Hominy, drained well
4 oz. Can Green Chiles
1-1/2 C. Sour Cream
1 C. Cheddar Cheese, shredded
Salt and Pepper to season to taste

Directions:
Preheat oven to 350°.
Cook bacon, then add onion and sauté. Mix in well-drained hominy, chile and sour cream. Salt and pepper mixture to taste. Place in a 9”x9” baking dish that has been sprayed with non-stick spray. Bake 35-40 minutes. During the last 5 minutes, add cheese to the top and place back in oven to melt.
