SPICY CHICKEN TAGINE with APRICOTS, ROSEMARY, and GINGER Recipe

Ingredients: 2 TBS EVOO with a pat of unsalted butter (if possible, use Moroccan EVOO, cold pressed).
1 Onion, finely chopped
3 sprigs Rosemary,1 finely chopped, the other 2 cut in half
1 1/2 " piece of fresh Ginger, peeled and finely chopped
2 Chiles, seeded and finely chopped (your preference - hot or mild).
2 whole Cinnamon sticks
1/4 C dried Apricots
8 Chicken thighs
2 TBS clear Honey
1 - 14oz can plum Tomatoes with their juice (or chopped--it's easier).
Sea Salt and Fresh Ground Black Pepper
Small punch of fresh Green or Purple Basil leaves

Directions:1. Heat oil and butter in a tagine or heavy-based casserole dish.
2. Stir in chopped onion, chopped rosemary, ginger, and chiles and saute until the onion begins to soften.
3. Stir in the halved rosemary sprigs and the cinnamon sticks.
4. Add the chicken thighs and brown them on both sides.
5. Toss in the apricots with the honey, then stir in the tomatoes with their juice. (Add a little water if necessary, to ensure there is enough liquid to cover the base of the tagine and submerge the apricots).
6. Bring the liquid to a boil, then reduce the heat.
7. Cover with a lid and cook gently for 35-40 mins.
Season to taste with salt and pepper. Shred the larger basil leaves and leave the small ones intact. Sprinkle them over the chicken and serve the dish immediately. |

Notes: If possible, rub the chicken thighs with Moroccan Chicken Seasoning (Zamouri Spices). This will really take this dish up a notch or two! Amazon Prime carries a spice kit that includes 5-jars of spices; the EVOO, a jar of Red Harissa and jar of Preserved Lemons. Also, I added blanched almonds and Golden Raisins to finish this dish.
Should be served over Cousous for a truly delicious and authentic Moroccan dish.
