Kolachy Fillings


Ingredients:

½ lb. Butter
1 c. Shortening
1 tbsp. Salt
1 tbsp. Baking Powder
7-½ c. Flour
4 Eggs
½ pt. Sour Cream
1 pkg. Instant Yeast
½ c. Warm Water
Powdered Sugar

Directions:
Directions:
Dissolve yeast in ½ cup warm water.

Mix all dry ingredients in a large bowl. Add butter and shortening and cut as like a pie crust.

In another bowl, beat eggs, add sour cream and mix well. Add to dry ingredients.

Add proofed yeast dry ingredients.

Form dough and and chill overnight. Roll out on board and cut into small squares and fill with favorite fillings.

Important: roll out dough in powdered sugar, not flour

Bake 305º for 15 - 17 minutes. When cooled, dust tops of cookies with powdered sugar.
 

Kolachy Prune (Levkar) Filling

1 lb. pitted dried Prunes
1-1/2 c. water
1/2 c. sugar
3/4 tsp. cinnamon
1/4 tsp. ground cloves


Directions:
Directions:
Put fruit in a pan. Add water and simmer slowly 25 minutes covered or until liquid has been absorbed. If liquid is not absorbed, uncover and simmer until it is evaporated.

Add cinnamon, sugar, cinnamon and ground cloves. Puree in food processor. Let cool and use as filling for cookies.
 

Kolachy Apricot Filling

1 lb. dried apricots
1-1/2 c. water
1-1/2 c. sugar
1/2 tsp. cinnamon
1/4 tsp. ground cloves

Following same instructions as for prune (Lekvar) filling.
 

Kolachy Nut Filling


Ingredients:  
Ingredients:  
1/2 lb. finely chopped walnuts
1/2 c. sugar
1/4 c. water
1/2 lemon squeezed

Mix sugar in 1/4 cup water and bring to boil. Remove from stove and add juice of one half of lemon. Add walnuts and mix. Let cool and use for filling for cookies.

This is Aunt Sue's recipe and is an old family recipe from the Polish side of the family always made during Christmas.
