1 stick butter
1 medium union chopped
1 cup chopped celery leaves and finely chopped stalk
1 cup parsley
½ bag herbed bread cubes (stuffing mix)
½ bag cornbread cubes (stuffing mix) (Optional) You can adjust the amounts bases on how much you want to make
poultry seasoning
low sodium chicken broth

in a large skillet melt the butter. After the butter melts add the union and saute. Don't over cook the onion. Add celery and parsley and cook for a minute over low heat.

In a large bowl add the bread cubes (stuffing mix). Add some of the chicken broth (don't make it mushy) Add the onion, celery, parsley mix and stir. Add more chicken broth but don't make it mushy. You're going for a consistency of cookie dough.

While mixing slowly add the poultry seasoning. Don't over do this! Add just enough so you can smell it in the stuffing.

Add mixture the cavity of the bird or just bake it at º350. Its OK to brown the top a bit
