2 cans [1 pound ea] red salmon or tuna, drained and flaked
1 package [10 oz] frozen chopped spinach, thawed and well drained
2½ cups [10 oz] shredded Jarlsberg cheese
1 cup fresh bread crumbs
2 eggs, lightly beaten
1/2 cup minced onion
1/2 cup minced parsley
1 T lemon juice
1/4 cup butter
1 package [8 oz] lemon dill sauce mix
1 cup cold water
1/2 cup milk
1 package [16 oz] frozen mixed vegetables, cooked and drained or 2 cups steamed fresh vegetables - such as broccoli, baby carrots and red peppers.

Butter an 8 inch springform pan; set aside.
In a large bowl, blend salmon or tuna, spinach, 1½ cups of the cheese, bread crumbs, eggs, 1/3 cup onion, 1/3 cup parsley and lemon juice. Spread evenly into the prepared pan.
Bake in a 350º oven for 30 minutes. Top with remaining 1 cup cheese and bake 15 minutes longer.
Meanwhile, in a saucepan, cook remaining onion and parsley in butter until tender, stirring frequently.
Blend in lemon-dill sauce mix. Remove from heat; gradually blend in water and milk.
Cook, stirring constantly, until mixture comes to a boil. Reduce heat and simmer 1 minute, stirring.
To serve: Remove loaf from pan; place on serving platter or low pedestal.
Arrange vegetables on top of loaf and serve with sauce. Garnish with lemon wedges, if desired.
