1 lb. ground chuck
1 lb. bulk italian sausage
2 lb. chuck roast, cut into cubes
4 (15 oz.) cans chili beans, drained
2 (15 oz.) cans chili beans in spicy sauce
2 (28 oz.) cans diced tomatoes with juice
1 (6 oz.) can tomato paste
1 large onion, chopped
3 stalks celery, chopped
1 green pepper, seeded & chopped
1 red pepper, seeded & chopped
1 T. bacon bits
4 cubes beef bouillon
1/2 c. beer
1/4 c. chili powder
1 T. worcestershire sauce
1 T. minced garlic
1 T. dried oregano
2 t. ground cumin
2 t. hot pepper sauce (Tobasco)
1 t. dried basil
1 t. salt
1 t. black pepper
1 t. cayenne pepper
1 t. paprika
1 t. white sugar

For topping:
fritos
sour cream
green onions, chopped
shredded cheddar cheese

1. Heat a large pot over medium-high heat. Brown the ground chuck & sausage with the onion. Drain grease.

2. Pour in the rest of the ingredients. If you like more heat, add chopped jalapeņos. Stir to blend, then cover & simmer over low heat for at least two hours. The longer the better! Stir occasionally.

3. After two hours, taste & adjust salt, pepper, or chili powder if necessary.

4. Serve into bowls & top with desired toppings. This chili is really good reheated the next day.
