1½ C. graham cracker crumbs
6 T. melted margarine
1/4 C. sugar
Filling:
4 - 8 oz packages cream cheese - room temperature
1½ C. sugar
4 eggs
2 T. real lemon juice
1 tsp vanilla
3 T. corn starch
1 pt. sour cream
1/2 C. melted margarine
Topping:
1 qt. whole strawberries
1 C. crushed berries
1/2 C. sugar
3/4 C. water
2 T. corn starch
red food coloring

Crust:
Mix together graham cracker crumbs, melted margarine and 1/4 c. sugar and press into bottom and up sides of spring form pan (large).

Filling:
Beat room temperature cream cheese until fluffy with sugar. Beat in eggs, one at a time. Add lemon juice and vanilla. In a separate bowl, mix corn starch, sour cream and melted margarine. Beat into cream cheese mixture. Pour in crust.

Bake 325º for 1 hour. Turn off oven and leave 2 hours. Then refrigerate.

Topping:
Stand up whole berries over top of cheesecake.

Combine crushed berries, add 1/2 C. sugar, 3/4 C water, boil for 5 minutes. Add food coloring. Strain berries, sugar, and water. Remove pulp to get "clear" juice. Add 2 T. corn starch. Mix with water, cook until thick and clear. Cool. Spoon over top of berries.
