Turkey Stuffed Acorn Squash


Ingredients:

1 acorn squash, cut in half and seeded
1 lb ground turkey
1 small or ½ of a large sweet yellow onion, chopped
1 - 2 celery stalks, chopped
¼ c cranberries (dried, fresh, or frozen)
1 whole apple, chopped (gala, pink lady, kanzi, fuji, granny smith, or any variety that has a tartness to it)
1 - 1½ Tbsp dried thyme
2 tsp crushed rosemary
1½ tsp dried sage
1 tbsp whole wheat panko bread crumbs, plain
¼ c parmesan cheese grated
1 - 3 tsp concentrated chicken bone broth stock (to your liking)
½ tsp garlic powder
1 tbsp Olive oil
Salt and pepper, to taste

Preheat oven to 400º F

Cut the squash in the middle (vertically)

Using a spoon scoop seeds into a bowl and set aside

Spritz both halves with olive oil, season with garlic powder, salt, and pepper
Place squash on cookie sheet in oven and roast for 60 minutes

In the meantime, heat a skillet, add turkey, season with garlic powder, salt and pepper
Cook until cooked throughout, breaking meat up as it cooks
Remove meat from pan

Add 1 tbsp olive oil to pan and heat
Add onions and thyme, rosemary and sage
Cook until onion is translucent, ~5 minutes
Add celery, apple, and cranberries and cook for another 3 - 4 minutes
Return cooked ground turkey to the pan
Add chicken concentrate, salt and pepper and cook for another 3 minutes
Add breadcrumbs and parmesan cheese
Stir well and and check for seasoning
Fill squash with stuffing mixture
Place in the oven and bake for 15 minutes
Enjoy!

*can also be made with quinoa instead of ground Turkey
 

Toasted (Squash) Seeds

Squash seeds, separated, rinsed and pat dried
Sprinkle of salt

Preheat oven to 300° F

OR

Once squash is done, turn oven down to 300° F

Separate the seeds from the guts, placing seeds in a small strainer as you go
Once all seeds are separated, rinse thoroughly, removing any remaining guts

Place wet seeds on paper towel to remove excess moisture
Transfer seeds to a cookie sheet
Spritz with a light spritz of olive oil (optional)
Lightly sprinkle with salt
Cook ~ 15 - 20 minutes (dont overcook)
Take out of oven, allow to cook for a couple minutes and Enjoy
