1 tsp Oil
1 medium Green Pepper, chopped
½ cup Onion, chopped
¼ cup Parsley, chopped
1 tsp Oregano
6 oz Mozzarella Cheese, shredded
6 Lg Eggs
1 oz Pepperoni, chopped
¼ cup Water
1 can (16 oz) Tomatoes, drained & chopped

Directions:
Directions:
Saute green pepper and onion in oil. Beat eggs with water until frothy. Combine all ingredients and pour into a greased 10" pie plate. Bake at 350º for 20-25 minutes, or until set in the center. Let stand 10 minutes before serving.

Note: You may substitute the drained tomato juice for the water.
