Banana Bread Recipe

1 c very ripe banana, mashed (~3 or 4)
2 eggs, room temp
⅓ c coconut oil, melted and cooled
⅓ c sugar free maple syrup
½ c nonfat plain Greek yogurt
1 tsp pure vanilla extract
1¼ c whole wheat pastry flour
¾ c vanilla whey protein powder
1 tsp baking soda
1 - 2 tsp cinnamon (depending on your taste)
¼ tsp salt
½ c chopped walnuts, optional
½ c unsweetened shredded coconut flakes, optional

Directions:

Preheat oven to 350º F
Either use a nonstick bread pan or line a pan with parchment paper and spray with nonstick cooking spray

Add mashed banana, eggs, coconut oil, maple syrup, greek yogurt and vanilla extract to blender and blend until smooth

In a large bowl, measure out dry ingredients (except optional items)
Stir to combine
Add wet ingredients to bowl of dry ingredients
Mix well until just combined (do NOT overmix)
Fold in any optional items

Pour mixture into prepared baking pan
Slice banana down middle or cut into slices and top mixture, if using

Bake bread for 45 to 55 minutes, toothpick should either come out clean or have a few crumbles, not wet
Once done, cool in pan for 5 to 10 minutes
Remove from pan and finish cooling on a wire rack
