1 8 oz package cream cheese
1 3.4oz. package instant cheesecake pudding, unprepared
1 Cup International Delight Vanilla creamer, liquid
1 lb. strawberries, hulled and sliced
4 mandarin oranges, peeled and cut
1, 20 oz can pineapple bits, drained
3 kiwis, peeled and cut into bits
2 mangoes, cut into bite size chunks
1 banana, sliced
Juice of ½ a lemon
*CAN ADD OR REMOVE FRUIT AS DESIRED! I USE GREEN APPLES, AS WELL)
DO IT, DO IT NOW!
*In medium bowl, using an electric mixer, or whatever you have handy, whip cream cheese until it becomes smooth Add dry pudding mix and beat until well combined *With mixer on low, slowly add the liquid creamer (**DO NOT pour all of the creamer in bowl at once. It will get clumpy like a baby’s diaper and will not smooth out regardless of what you do). Add about a TBSP at a time, until it becomes smooth. *In a separate bowl, combine fruit EXCEPT bananas. *Add cheesecake mixture and gently fold into the fruit. *In a small bowl, combine banana “coins” and lemon juice. Toss until well coated, dram excess lemon juice, and gently fold the banana into the cheesecake salad. *Chill until ready to serve or serve immediately. (If you try this while you’re putting everything together, which you will naturally do, you won’t want to chill it. Lol) **Side notes: If you have to substitute cream for the creamer, powdered sugar and vanilla would be the best alternative. 1 cup heavy cream, ¼ powdered sugar and 2 TSP vanilla extract.
