2 Potatoes, diced
2 tsp Oil
2 tsp Butter
cup Onion, chopped
1 can (4 oz) Mushrooms, sliced & drained
cup Green Pepper, chopped
cup Ham, diced
5 Eggs, beaten
2 T Milk
2 tsp Parsley, chopped
cup Cheddar Cheese, shredded

Directions:
Directions:
Cook diced potatoes in water until just tender. Drain and lightly brown in oil. Remove from pan and set aside. Saute Onions and green peppers in butter. Add potatoes and ham. Add beaten eggs, milk, and parsley. Cook to desired consistency and sprinkle with cheese.
