2 pounds ground beef
4 pounds cabbage, shredded
3 cups shredded red cabbage
1/2 pound light brown sugar
10-ounces freshly chopped spinach
2 cups shredded carrots
2 (32-ounce) cans pureed tomatoes or tomato sauce
1/4 cup lemon juice concentrate
1/4 cup Crystal hot sauce, plus more to taste
1/4 cup beef base (see note)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon Nature's seasoning
1/4 cup diced onion
Chopped fresh tomatoes (optional)
Chopped tops of celery stalks (optional)

Saute ground beef; drain.

In a large pot, combine ground beef, cabbages, brown sugar, spinach, carrots, tomatoes and enough water to cover. Mix well and cook over high heat 20 minutes.

Lower heat to medium and stir in remaining ingredients, adding chopped tomatoes and celery tips if desired. Simmer 1 minute. Continue cooking until cabbage is done, about 1 hour. Adjust seasonings and add additional hot sauce if desired.
