7 C coarsely chopped peeled fresh peaches
12 oz can frozen apple juice concentrate
2 TBS Fresh lemon juice
1 TBS unflavored gelatin

Directions:
Directions:
Combine all ingredients in 3 qt saucepan bring to boil on medium high. Reduce heat to medium cover loosely, stirring often cook 15 minutes. Skim foam from top and ladle into freezer containers leaving ½ inch at top. Cool to room temperature, refrigerate 24 hours and then store in freezer.

Lemon juice must be fresh squeezed or jam may turn cloudy.

Works great as a peach pie also just increase gelatin or add another thickener.
Can leave the gelatin out and use to freeze fresh peaches, they will not turn brown.
