3/4 T olive oil
2 medium onions, diced
1 T garlic, minced
1 red pepper, diced
1/4 yellow pepper, diced
6 cups chicken broth
1 15 oz. can tomato sauce
2 tsp. black pepper
1 tsp. crushed red pepper
1 cup basmati rice (or your favorite)
1/2 cup reduced fat chunky peanut butter
1 pound chicken, cooked, boned and chopped

Heat oil in a large pot over low heat. Increase heat and add the onions. Saute until they start to become transparent. Add garlic and saute for 2 minutes. Add the red and yellow peppers and saute and additional 5 minutes. Add the chicken stock, tomato sauce, black pepper and crushed red pepper. Bring to a boil and add the basmati rice, stirring often. When the rice is cooked, add the peanut butter and mix thoroughly. Add the diced chicken and simmer util thoroughly heated.
