10 pounds tomatoes
1 large red pepper, minced
1 large onion, minced
1 ½ T. salt
2 tsp pepper
1/4 cup lemon juice
1/2 cup apple cider vinegar

Directions:
Directions:
Drop a couple of tomatoes at a time into boiling water. Leave for 30 seconds and peel. Core and quarter all tomatoes. Put all ingredients into a large saucepan and cook for 40 minutes. Process in a food processor or blender in batches until all tomatoes and vegetables are liquified. Return to pan and cook 30 minutes more. Ladle into hot jars, clean rims and seal with hot lids. Process in a hot water bath for 45 minutes. Makes 5 quarts.

Daneen is my dear friend from Covenant Church. She loves to do home canning and was my inspiration to start. Even though, I had grown up with Mom doing vast amounts of home canning, I never followed in her footsteps and bought all my canned food from the grocery. But, later in conversations with the good fresh food that Daneen was doing, I decided to give it a try and found out how rewarding it is, how convenient, and how tasty.
