1 doz Eggs, separated
½ tsp Salt
2¼ Cups Sugar
1 qt Whole Milk
2 T Vanilla
3 pts Heavy Cream, or Hal & Half
¼ tsp Nutmeg
1 Cup Cognac, Brandy, or Rum

Directions:
Directions:
Beat egg yolks and salt in a large mixing bowl, slowly adding 1½ cups sugar. Beat until thick and pale. Add liquor, milk, vanilla, and nutmeg until well mixed. In a separate bowl, beat the egg whites and ¾ cup remaining sugar. Beat until sugar is fully incorporated, but not stiff. Add the heavy cream and mix well. Combine with the yolk mixture and pour into containers and store in fridge. Best if it sets a few days to blend the flavors
