1 tbsp coconut or olive oil
1 ½ tsp cumin seeds
1 yellow onion, diced
1 tbsp minced fresh garlic
1 tbsp minced fresh ginger
1 green chili pepper, seeded and minced
1 ½ tsp garam masala
1 ½ tsp ground coriander
½ tsp ground turmeric (can also add fresh turmeric if you have it)
¾ tsp salt
¼ cayenne pepper
1 28 oz can whole or diced tomatoes, with juice
1 28 oz can chickpeas
1 cup basmati rice
fresh lemon juice for serving
fresh cilantro, chopped for serving

1. In wok, or saucepan, heat oil, add cumin seeds. Stir and toast for a minute or two until golden and fragrant, avoid burning.
2. Over medium heat, stir in onion, garlic, ginger and pepper. Cook for a few minutes, stir in garam masala, coriander, turmeric, salt, cayenne and cook for 2 minutes.
3. Add tomatoes and chickpeas.
4. Bring mixture to a simmer and cook 10 minutes
5. Garnish with a squeeze of lemon and chopped cilantro.
6. Serve over rice.
