2 cups (1 pound) Pinquito Beans
2 or 3 cloves of garlic, minced
1 large onion, chopped
1 can (8 oz) tomato sauce
4 strips bacon, cooked and crumbled
½ pound lean ground beef cooked and crumbled
1/3 cup bacon drippings
2 - 4 t chili powder
¼ t cumin

Wash beans thoroughly and remove any pebbles. Soak beans overnight in cold water. Drain in the morning and rinse. Cover beans in a pot with boiling water. After beans come to a boil, add the remaining ingredients. Cover and simmer gently for 2-3 hours until beans are tender and sauce is thick and rich. Stir occasionally and add a little boiling water if necessary. When done, beans should neither be dry or soupy. Sauce should resemble a gravy.

Pinquito beans are from Southern California, grown in the area of Santa Maria. Aunt Evelyn Sellers Dickey first introduced us to these beans in the 90s when we would go to see her in Guadalupe, CA.
