Let meat stand at room temperature at least an hour before roasting. Preheat oven to 375 degrees. Rub meat well with salt and sprinkle with pepper. Put fat side up in a shallow baking or roasting pan. Do not cover and do not add water. Place roast in preheated oven and cook for just one hour. Turn oven off, but do not open oven door at any time until ready to serve. Regardless of the time the roast has been in the oven, turn the oven on again at the same temperature (375 degrees) about 40 to 50 minutes before you plan to serve the meat. Roast for that amount of time. Now you can open the oven door, place roast on serving platter, garnish with parsley, and serve.
