Ingredients:  
1 lb can salmon or 2 cups cooked salmon
1 egg
2 T mayonnaise
1 T lemon juice
1/2 cup soft bread crumbs or 1/2 cup saltine crackers, crushed
2 T parsley
1/2 onion, chopped
1/2 tsp pepper
Sauce:
1 can mushroom soup
4 T milk
Tabasco sauce

Directions:
Directions:
Place salmon in large bowl and add the rest of ingredients. Mix well, adding small amount of milk if mixture is too dry. Pat mixture into an oiled loaf pan and cover with foil. Bake 45 minutes in 350º oven.
For sauce: Heat cream of mushroom soup with 4 T milk. Add a few drops Tabasco and pepper to taste.
Spoon sauce over loaf on platter. Garnish with chopped hard boiled egg and parsley.
