2 cups oysters, fresh
1/4 cup spinach, chopped
1/4 cup Parmesan, grated
1 cup saltines, crushed
4 T butter, melted
1/2 cup milk
salt and pepper to taste

Directions:
Directions:
Mix together the spinach, Parmesan, crackers, melted butter and milk. Set aside.
Preheat oven to 400º, Lightly oil a medium casserole dish. Add 1/3 of the mix. Top with 1/2 of the oysters. Add 1/3 of the mix and top with remaining oysters.
Top with the remaining mix and bake for 45 minutes or until lightly browned.
