1/4 lb smoked sausage, diced
1 medium onion, diced
1 stalk celery, diced
1 medium green bell pepper. diced
2 tsp garlic, minced
1 T Cajun seasoning
2½ cups tomatoes, diced
1½ lbs. large shrimp, peeled and deveined
1½ T olive oil
3 cups cooked rice

Directions:

Cook the diced sausage for 5 minutes. Add the onion, celery, pepper and garlic. Cook until just soft. Add the tomatoes and seasoning. Simmer for 20 minutes. Heat the oil in a skillet over medium heat. Add the shrimp and cook until just pink. Toss the shrimp in the sauce. Serve warm over cooked rice.
