4.5 pounds Pork Shoulder ( ground pork)
1tsp instacure #1
1TBSP kosher salt
1 TBSP cracked pepper
2 tsp ground pepper
1/3 cup skim milk powder
1/2 cup maple syrup

Directions:
Directions:
mix all ingredients until mixer is sticky

place mixture in a deep glass baking tray( saran wrap pan liner) and pat it down evenly flat in tray

leave in fridge over night

flip pan upside down onto smoker grill and place in smoker that is preheated to 150 F

Smoke or Cook in oven until internal temp is 155 F raising temperature slowly 10 degrees every hour

once at 155 F take out of smoker- let cool

slice loaf into 1/8 slices and package into serving sizes appropriate to the household size
