1/2 c. Granulated sugar
1/2 c. Brown sugar, packed
1 Tbsp. Cinnamon, ground
1 tsp. Salt
1/4 tsp. Cayenne pepper
4 c. Pecans halves, unsalted, (12 ounces)
1 lg. Egg white, whisked

Directions:
Directions:
Preheat oven to 300º F. Add granulated sugar, brown sugar, cinnamon, salt, and cayenne to a large bowl or Ziploc bag. Toss until evenly combined. Set aside.
In a separate bowl, add pecans and egg whites. Gently toss until pecans are evenly coated. Add the sugar mixture to the coated pecan, and toss until combined. Spread the mixture out in a single layer on a parchment-lined baking sheet. You may need to split the batch onto two baking sheets. Bake for about 40 minutes, removing the nuts to stir every 20 minutes, until the pecans are fragrant and the sugar coating is cooked. The sugar will harden more once the pecans are out of the oven.
Remove from the oven, cool nuts on baking sheet placed on a cooling rack until they reach room temperature. Store in sealed container until ready to use. YIELD: 6 CUPS

This simple recipe for candied nuts is only calls for 7 ingredients. They are perfect for topping salads, entrees and desserts. They also make a delicious gift! Lori graciously gave us a gift of these when she and her husband Carl came to visit us in Florida. When he was growing up, Carl lived next door to my husband Paul and is like another son in the Lighton home. We love them both.
