¾ C. Butter
1 ½ C. Brown Sugar, packed
2 T. Water
2 C. Semisweet Chocolate Chips
2 Eggs
2 ½ C. AP Flour
1 ¼ t. Baking Soda
½ t. Salt
36 Andes Mints

Directions:
Directions:
In a medium saucepan over low heat, cook butter, sugar and water until the butter is melted. Add the chocolate chips and stir until partially melted. Pour into a large mixing bowl and let stand for 10 minutes.

At a high speed, beat eggs one at a time into the chocolate mixture. Reduce speed to low and add the dry ingredients until blended. Chill dough for about an hour.

Preheat oven to 350 º. Roll dough into 1 inch balls and place 2 inches apart. Bake 8 - 10 minutes. While cookies are baking, unwrap the Andes Mints and divide each one in half. When cookies come out of the oven, place a 1/2 a mint on top of each. Let stand for a few minutes until meted and the lightly spread on top of the cookie, sort of swirling so you can see swirls in the chocolate. Let cool.
