2 C.Sugar
1 C. Butter, softened
4 Eggs
4 ½ C. Flour
4 t. Baking Powder
¾ t. Salt
⅓ C. Brandy
1 ½ t. Anise Extract (or more)
1 t. Vanilla
1 C. Slivered Almonds
2 T. Anise Seeds

Preheat oven to 350 º. Line 2 cookie sheets with parchment or foil

In a large mixing bowl, beat sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Combine brandy, anise extract and vanilla in a small bowl. In a medium bowl, combine flour, baking powder and salt.Alternately, add dry ingredients and brandy mixture. Stir in the almonds and anise seeds. Form into two logs - one on each cookie sheet. Smooth dough with moistened fingers. Bake 30 - 35 minutes or until golden brown and firm. Cool completely and reduce oven to 300 º. Slice logs on the bias about ¾ inch thick. Bake slices 10 - 12 minutes on each side. Cool on racks. Biscotti will crisp up as the cool.

We like these hard and crunchy for dunking. I bake them a few minutes longer than directed during the second baking until each side is nice and golden.
