2 tablespoons butter
2 tablespoons flour
1 ½ cup milk
¼ salt
dash of pepper
4 (5 oz) cans Tuna, drained
2 cups peas

Biscuits
2 cups flour
½ teaspoons salt
2 teaspoons baking powder
½ cup butter
⅔ cup milk
½ to 1 cup shredded cheddar cheese

Prepare white sauce. Melt butter in saucepan over low heat; remove from heat. Blend in flour until smooth. add milk gradually, stirring constantly. Cook over medium heat until thickened, stirring constantly; reduce heat. Simmer for 2 to 3 minutes.

Stir in tuna, peas and water. Spoon into deep 2 ½ quart baking dish. Place in cold oven; set oven temperature to 425º.

Make biscuits. Combine dry ingredients in bowl. Cut in butter until crumbly. Add milk, stirring until dough forms a ball. Kneed gently 5 to 10 times - do not over work or biscuits will be tough. Roll or pat out on floured surface ½ inch thick. Sprinkle with cheese cheese. Roll as for jelly roll to enclose cheese, sealing edges and ends. Cut into twelve 1-inch slices.

Remove tuna casserole from oven when it becomes bubbly. Arrange biscuits over top. Bake for 20-30 minutes longer or until biscuits are brown.
