1 lb. shelled pecan halves or walnuts
1 egg white, slightly beaten
1 cup granulated sugar
1 tsp. ground coriander
1 tsp. cinnamon
1 tsp. salt

Preheat oven to 300º
Butter a large cookie sheet

In a large bowl, gently mix nuts and egg white until nuts are coated. In a small bowl, mix sugar with three spices. Sprinkle about ⅓ of the dry mix over nuts and gently fold until evenly mixed with nuts. Repeat until all the spiced sugar is mixed into the nuts. Spread nuts in a single layer on a buttered cookie sheet.

Bake for 10 minutes. Turn nuts over with a spatula. Repeat until nuts have baked for a total of 30 minutes. Cool and store in an airtight container.

My good friend, Pat Sills gave me this recipe. It’s wonderful as a snack and also to add to salads. I used to make these for my Mom as a Christmas snack. She asked for the recipe and started giving them to family at Christmas. My sister asked for the recipe and gave it to a friend in Vermont who sells them at her store. They are someone addictive, especially when they are warm out of the oven. Try not to eat them all in one night.
