2 pounds fresh carrots,
peeled
1 tablespoon grapeseed
oil
1/2 teaspoon salt
1/4 teaspoon ground
black pepper
1 tablespoon parsley,
minced

Directions:
Directions:
1. Heat oven to 350 degrees.
2. Wash and peel carrots. Cut off both ends on a bias.
Cut in half and then in half lengthwise.
3. Place carrots on sheet pan and toss with oil, salt
and pepper.
4. Turn carrots cut side down on sheet pan, and roast
in oven for approximately 45 minutes or until cut
side is browned and carrots are tender. Garnish
with parsley.
