3 large fresh beets
2 tablespoons grapeseed
oil
1/2 teaspoon salt
1/4 teaspoon ground
black pepper

Directions:
Directions:
1. Heat oven to 350 degrees.
2. Wash and trim roots and leaves from beets. Pat dry
then place beets, oil and salt and pepper on a large
piece of tin foil; wrap beets loosely with foil,
pinching and sealing foil closed.
3. Place foil on sheet pan and roast for 45-60 minutes
until beets are soft. Allow beets to cool, cut off top
and any remaining root, remove skin with a spoon,
the skin will slip off easily. Cut beets into quarters.
