LIME DRESSING

2 pounds medium
shrimp, peeled, deveined
and tail off
4 tablespoons of
blackening seasoning
2 tablespoons grapeseed
oil
1 head of red leaf lettuce,
washed and chopped
1 peeled mango, pitted
and diced
1 small jicama, peeled
and sliced
1 medium cucumber,
peeled and sliced
1/2 cup mandarin orange
segments
2 tablespoons scallions,
sliced on bias

Directions:
Directions:
1. Heat oven to 350 degrees.
2. Place shrimp in a large bowl, drizzle with oil and
sprinkle with blackening seasoning. Toss to coat
shrimp with seasoning. Place on sheet pan in single
layer, and bake for 10 minutes or until shrimp are
pink and curled into a C shape.
3. Wash, pat dry and chop lettuce into bite size pieces.
4. Peel and chop mango. (Mangos have a large, flat
shaped seed in the middle of the fruit.) Place stem
side up on cutting board with the narrowest side
toward you and cut straight down approximately
1/2 inch from the stem. Cut down both sides of
fruit then chop into bite size cubes or slices.
5. Peel skin off jicama with vegetable peeler or paring
knife. Cut jicama into a large cube shape. Cut cube
into 1/4 inch slices, stack slices, and then cut into
matchsticks shape pieces.
6. Peel skin off cucumber with vegetable peeler or
paring knife. Cut cucumber into round slices.
7. Assemble salad with fresh ingredients and top with
shrimp. Garnish with scallions. Serve with lime
dressing.

4 limes, zested and
juiced
1/2 cup grapeseed oil
1 1/2 teaspoons agave
nectar
Salt and pepper to taste

1. Zest and juice limes into a 2 cup measuring cup.
Add agave nectar. Use immersion blender and
slowly drizzle in oil with machine running. Season
with salt and pepper to taste.
2. By hand method: Place zest, juice and agave nectar
in bowl. While whisking, slowly drizzle in oil.
Season with salt and pepper. Taste and adjust
seasoning accordingly
