1/2 cup marinated mixed
olives, pitted
1/4 cup pepperdews, or
roasted red peppers
1 tablespoon fresh
parsley, chopped
1 garlic clove, chopped
2 pounds pork cutlets
1 teaspoon salt
1/2 teaspoon black
pepper
2 tablespoons grapeseed
oil

Directions:
Directions:
1. In a food processor, combine olives, peppers and
garlic clove. Pulse food processor until combined
and finely chopped. Taste and adjust seasonings
with salt and pepper. Remove and set aside.
2. Season pork cutlets with salt and pepper on both
sides.
3. Heat two tablespoons of oil in a large sauté pan
over medium-high heat, add pork cutlets. Do not
overcrowd the pan or the meat will not brown. The
pork cutlets will easily release from pan when
ready. Be patient. Once meat releases from pan,
flip over and sear the other side until cooked
through, approximately 5 minutes on each side.
4. Serve with olive tapenade.
