LIME DRESSING

2 hardboiled eggs,
quartered
1 teaspoon coconut oil
2 pounds boneless chicken
breast, cut into bite size
pieces
1 pound bacon, cut into
lardons
1/2 cup of frozen peas
1 large head romaine
lettuce or 2 romaine hearts,
chopped
1 (8 ounce) package of
cremini mushrooms, sliced
1 cucumber, peeled and
sliced
1 cup grape or cherry
tomatoes, halved
1 pint of strawberries,
stems removed and
quartered
1 cup pre-shredded carrots
1 avocado, pit removed and
sliced

1. To hard boil eggs: Cover eggs with cold water, bring pot
to boil with lid on, remove from heat and allow to sit for
25 mins. Rinse with cool water, peel the shell and
quarter eggs.
2. Season chicken pieces.
3. Heat one teaspoon of oil in a non-stick pan over
medium heat. Add one-third of the chicken pieces,
cook chicken in batches until lightly browned and
cooked through. Do not overcrowd the pan otherwise
the chicken will not brown. Once cooked, remove
chicken and set aside.
4. Cut bacon into narrow strips and cook in covered sauté
pan over medium heat, stirring occasionally, lowering
the heat as the bacon starts to crisp, cook until bacon is
crispy and the fat is rendered, approximately 30-40
minutes. Remove bacon lardons from fat onto paper
towels to drain and cool.
5. Cook peas according to package instructions, drain, cool
in ice bath and set aside to cool.
6. Wash and chop the romaine lettuce, mushrooms and
cucumber.
7. Cut avocado in half lengthwise, twist to separate,
remove pit, make slices in flesh and scoop out with
spoon.
8. Assemble fresh salad ingredients with cooked chicken
and bacon.
9. Serve with lime dressing

4 limes, zested and
juiced
1/2 cup grapeseed oil
1 1/2 teaspoons agave
nectar
Salt and pepper to taste

1. Blender method: Place zest, juice, agave nectar,
pinch of salt and pepper in 2 cup measuring cup.
Using an immersion blender, slowly drizzle in oil
with machine running until oil is incorporated.
Taste and adjust seasoning accordingly.
2. Whisking method: Place zest, juice, agave nectar,
pinch of salt and pepper in a stainless steel bowl.
While whisking slowly drizzle in oil until all the oil is
incorporated. Taste and adjust seasoning
accordingly
