1/2 C. Sour Cream or Greek-Style Yogurt
3/4 C. Shredded sharp cheddar cheese
1/2 C. grated Parmesan cheese
1/4 to 1/2 C. finely diced jalopenos- either fresh or canned
2 Tsp. Ground cumin
1/2 C. Milk
1 C. Self rising flour
2 Large eggs
1/2 C. canned French's Fried Onions

Preheat oven to 400

Lightly grease muffin pan.

In medium bowl, whisk together all of the ingredients umtil they are thoroughly combined.

Scoop batter into the muffin cups filling them nearly full.

Bake 20 to 25 minutes or until they are golden brown. Remove from oven and let cool for 5 minutes before removing them from the pan.

Makes Approx. 24 mini muffins.
