2 pound chuck roast 1 pound potatoes
1 yellow onion 1 pound carrots, parsnips or turnips
1/3 cup red wine 1 tsp salt
2/3 cup water or beef broth 2 tbsp. olive oil

Hit Saute button on the Instant Pot and brown the roast for approx. 10 minutes, starting with the fattiest side so it doesn't stick. Cut an onion in half. Add the onion, wine and water to the pot. Sprinkle with 1 tsp of salt. Hit the Pressure Cook button and set for 60 minutes. You can cook the vegies in the oven at 425 for about 40 minutes starting them when there is about 20 minutes left on your roasting time. Allow the Instant Pot to use the natural release method which will make the pot roast juicy. (Save the drippings at the bottom of the Instant Pot for tomorrow's dinner....French Onion soup.)
