3 eggs
1 C. sugar
2/3 C. can pumpkin
1 tsp. lemon juice
3/4 C. flour
1 tsp baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1 tsp. salt
1 C. finely cut pecans or walnuts

Icing:
1 C. confectioners sugar 2 - 3 oz. cream cheese
4 T. butter
1/2 tsp vanilla

Directions:
Directions:
Beat eggs on high 5 minutes. Gradually beat in granulated sugar and lemon juice and pumpkin. Sift flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold in pumpkin mixture. Spread on well greased and floured 15 x 10 pan. Sprinkle nuts on top. Bake 375º -15 minutes. Do not cool. Turn out on dish towel. lightly sprinkle with confectioners sugar. Turn nut side on towel. Star on narrow end and roll up log and towel. Cool 45 minutes. Unroll flat and transfer to aluminum foil.

Icing:
Mix confectioners sugar, cream cheese and butter, vanilla and spread on side without nuts. roll up in foil and chill.
