• 1 ˝ cups peanut butter
• 6 cups confectioners’ sugar
• 1 cup butter, softened
• ˝ tsp. vanilla extract
• 4 cups semi-sweet chocolate chips

Directions:
Directions:
1. In mixer on medium speed, blend butter, butter, sugar and vanilla. Mixture will look dry.
2. Roll dough into 1” balls and place on parchment-lined cookie sheet.
3. Make a hole in the top of each ball with a toothpick, and chill in freezer until hard.
4. Melt chocolate chips in microwave, stirring frequently.
5. Using a toothpick as a handle, dip frozen balls into chocolate, leaving a circle of peanut butter at the top (Buckeye).
6. Place back on parchment paper and refrigerate 2 hours.
