1- 8 oz. carton plain greek yogurt
3/4 -1 cup grated and drained cucumber
2 T lemon juice
2 T. finely chopped onion
2 clove garlic minced
S&P to taste
1 tsp mint- chopped or 1/2 tsp dill ( opt)

3/4 cup plain hummus (or other flavors may be used)
1 T finely chopped onion
1/3 cup diced kalamata olives
1/2 cup seeded/chopped tomato
1/4 c. chopped cucumber (if desired)
1/2 -1 cup crumbled feta cheese( plain or flavored)
3 large pita bread rounds ( or already made pita chips- Babba from San Diego are best)

Make tzatziki sauce:
Grate cucumber and squeeze/drain until almost dry. Mix together cucumber, onion, yogurt, lemon juice and garlic. Add S&P to taste and fold in mint or dill if desired. Chill until ready to serve.

Spread hummus in bottom of pie plate or quiche dish. Spread tzatziki sauce over hummus. Sprinkle with tomatoes, olives and feta cheese.
Cut pita breads into 6 to 8 wedges and place around plate to use as dippers.


For crispier pitas, Halve, split pita rounds and cut into wedges. Bake in a single layer in a 350 degree oven for 10 minutes until crisp. Cool and cover and keep in cool dry place until ready to serve.

If desired put 1/2 to 3/4 tzatziki on hummus and the rest spooned on top or in side dish to dip with chips or grilled chicken skewers.
I have also used and olive /dried tomato tapenade instead of sliced olives.

I always double the tzatziki as we love it on sandwiches, chicken, fish and veggies.
