2 cups cooked chicken.
1 pound dry spaghetti, broken into 2 inch pieces.
2 10.5 ounce cans cream of mushroom soup
1 cup cheddar cheese, grated
1/3 cup green pepper, diced
1/3 cup red pepper, diced
1/2 cup yellow onion, diced
4 cups chicken broth
1/4 cup white wine
1 tsp salt
1/8 tsp cayenne pepper or more.


Reserve for sprinkling on top of casserole:
1 cup Parmesan, grated

Preheat oven to 350 degrees.
Cook spaghetti in the 4 cups of chicken broth. Almost all of the broth will be absorbed.
Combine the cooked spaghetti, whatever broth is left and the rest of the ingredients in a 9x13 glass baking pan.
Bake uncovered in oven for 40-45 minutes.

You can use cream of chicken soup in place of the cream of mushroom soup; or use one can of each.
This freezes well and can be kept for up to 6 months. Just thaw and reheat as above.
