2 cups fresh corn kernels
1 egg, lightly beaten
1/4 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/8 tsp pepper
2 Tbsp. butter, divided

Directions:
Directions:
1. Combine first 6 ingredients in a large bowl, stirring with a whisk.
2. Melt 1 Tbsp. butter in a large skillet coated with cooking spray over medium-high heat. Spoon 4 (1/4 cup) batter mounds onto pan. Cook 3 mintues on each side or until lightly browned. Remove fritters from pan; drain on paper towels. Repeat procedure with remaining 1 Tbsp. butter and 3/4 cup batter.

Yield: 7 servings
