2 (10 ounce) packages frozen chopped broccoli
1 (10 3/4 ounce) can 98% fat free cream of mushroom soup
3/4 cup light mayonnaise
1/2 cup (2 ounces) reduced-fat shredded sharp cheddar cheese
1/2 cup egg substitute
24 reduced-fat Ritz© crackers, crushed

1. Preheat oven to 350º.
2. Place broccoli in a wire mesh strainer; rinse with cold water until thawed. Drain well. Combine broccoli, soup, and next 3 ingredients in a large bowl. Spoon mixture into a 2-quart baking dish coated with cooking spray
3. Bake for 40 minutes or until bubbly and golden brown. Top with cracker crumbs, coat with cooking spray, and bake an additional 5 minutes or until crumbs are golden.

Yield: 8 servings

Nutritional info: 192 calories, 12g fat (3g sat), 15g carbs, 3g fiber, 7g protein
