2 C. Flour
2 C. Sugar
1/2 tsp. Salt
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Cinnamon
1/2 to 1 tsp. Cloves
1 C. Vegetable Oil
3 Eggs
2 (4 oz) Jars Plum Baby Food
1 T. Red Food Coloring
1 C. Chopped Walnuts

Frosting:
1 C. Powdered Sugar
1 T. Lemon Juice

Directions:
Directions:
Preheat oven to 350°.
In a large bowl add flour, sugar, salt, baking powder, baking soda, cinnamon and cloves, that have been sifted together. Make a well in the center and pour in the oil, eggs, baby food and red food coloring. Mix well, then stir in chopped walnuts. Pour batter into a bundt / tube pan that has been sprayed with nonstick cooking spray. Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
Remove cake from pan while still hot and frost (if desired) immediately.


Frosting:
In a small bowl combine powdered sugar and lemon juice, stir until smooth. May need to add a little more lemon juice, to taste and consistency.

Mama did not frost the cake. Clarene also submitted this recipe and it shows adding a cup of chopped dates.
