2 1/2 Tbsp cornstarch
1/4 tsp salt
3/4 pound lean flank steak, sliced thin
2 tsp canola oil
1 cup beef broth
5 cups small broccoli florets
1/2 Tbsp fresh ginger
2 garlic cloves
1/4 tsp red pepper flakes
1/4 cup soy sauce

Directions:
Directions:
Mix together 2 Tbsp cornsrarch and salt in a large bowl. Add steak and toss until coated evenly.
Heat oil in large, deep, heavy skillet or wok over medium-high heat. Add steak and stir-fry until lightly browned and cooked through, about 4 minutes. With slotted spoon, transfer to same large bowl.
Add 1/2 cup broth to skillet, stirring to loosen any browned bits from bottom of pan. Add broccoli; cook, covered, tossing occasionally and sprinkling with 1 Tbsp water if dry, until broccoli is almost crisp-tender, about 3 minutes. Uncover and add ginger, garlic, and red pepper flakes; stir-fry until fragrant, about 1 minute longer.
Stir together water, soy sauce, and remaining 1/2 cup broth and 1/2 Tbsp cornstarch in small bowl until smooth; add to skillet. Reduce heat to medium and bring to simmer; cook until slightly thickened, about 1 minute.
Return steak and any accumulated juiced to pan; cook, stirring about 1 minute longer.
