1 pound 93% lean ground beef
1 medium onion, diced
1 (14 ounce) can diced green chilies
8 ounces reduced fat shredded cheese
1 can olives, sliced
2 (10 ounce) cans enchilada sauce (green or red)
12 extra thin tortillas

Directions:
Directions:
Preheat oven to 350º.
Cook ground beef until no longer pink. Drain well.
Put some enchilada sauce in the bottom of a dish.
Layer ingredients in a casserole dish starting with the tortillas followed by the beef, onion, chilies, cheese, olives and some sauce. Repeat layers reserving some of the cheese and olives for the top.
Top with remaining cheese and olives, cover tightly with foil and bake for 30-40 minutes.
