1 pound walnut halves
1 cup white sugar
2 tsp ground cinnamon
¼ tsp salt
6 Tbl milk
1 tsp vanilla extract

Directions:
Preheat oven to 350º. Line a cookie sheet with parchment paper. Spread nuts in a single layer and roast for 8-10 minutes, or until nuts start to turn brown and the smell of roasting nuts fills the air.

Stir together sugar, cinnamon, salt and milk in a medium saucepan. Cook over medium-high heat for 8-10 minutes, or until the mixture reaches soft ball stage (236º F). Remove from heat and stir in vanilla immediately.

Cool slightly, then pour into 2 gallon Ziploc bag. Remove used parchment from cookie sheet and replace with fresh parchment or waxed paper. Pour roasted nuts in and shake until well coated. Spread coated nuts across the parchment-lined cookie sheet, separating with a fork if needed, and cool completely.

Store in airtight container. Can be used to top salads, ice cream sundaes or as a snack by itself.
