Ingredients: 3 Large Potatoes 1 Medium Onion, diced 2 Cloves Minced Garlic (or use 1tsp Garlic Powder, both are fine) (if mom is cooking it, dad doesn't like garlic) 1/2 tsp onion Powder 2 tsp Salt (or more as desired) 1 tsp Fine Ground Pepper 1 tsp Chili Powder 1 tsp Paprika 1/4 tsp cayenne pepper (if dad is cooking it, mom doesn't like cayenne pepper) 1-2 Tbsp left over oil from bacon or sausage (add more butter if not available) 2 Tbsp butter or more if desired

Directions:Prep - Dice potatoes into 1/2"x1/2"x1/4" cubes, cover with cold water in medium pot and bring to boil for 2-3 minutes. Should still be hard and not break apart (DO NOT OVERCOOK, if you do, just make mashed potato pancakes instead with it, because next part will not work...). Drain and cool spread out on a pan in a cool place to room temperature.
Cook: Bring the oil and butter to 350-375 degrees on a large pan over med-high heat. Pan should be large enough to have one layer of all potatoes spread out.
Add potatoes to oil, give a quick toss to coat potatoes in oil. Increase heat to high.
Cook for 3-5 minutes, until browning starts to occur on bottom edges of potatoes.
Toss potatoes in the pan, cook for another 3-4 minutes.
Add Onion, toss again, cook for 3-4 minutes.
Add a little more oil in corner of pan and toss in garlic cook for 15 seconds in the oil, then toss throughout
Mix together the pepper, onion powder, salt, paprika and onion powder (garlic powder too if not using fresh garlic). Toss into potatoes.
Taste, add more salt or other spices as desired to kick it up. |

Notes: Additional variations: Use steak seasoning instead of spice blend, try adding cayenne pepper for some kick, diced bell peppers with the onions, crumbled sausage mixed in, be creative.
