1 pt melon rind
2 c sugar
1/2 lemon, sliced thin
4 c water
2 tbs preserved ginger, sliced thin

Brine Soak
1 tbsp salt to 1 qt water

Directions:
Directions:
Remove the green and all pink parts.
Cut rind into 1 inch squares.
Cover with salted water (brine) and let stand overnight.
Drain and rinse with cold water.
Cover with boiling water and cook rapidly for 15 minutes.
Drain
Boil sugar and water for 5 min.
Add rind, sliced lemon, and preserved ginger.
Cook rapidly until melon is tender and transparent.
Pour into hot sterilized glass jars and seal tightly at once.
