1 pound bulk mild Italian sausage
1¼ crushed red pepper flakes
1/2 pound bacon, cut into 1 inch pieces
1 large white onion, diced
8½ cups chicken broth
6 large white potatoes, thinly sliced
1 cup heavy whipping cream
1 bag/box fresh baby spinach, about 5 ounces

Directions:
Directions:
In a Dutch oven saute sausage and red pepper flakes until crumbly and browned. Remove and set aside.
Saute bacon in same Dutch oven over medium heat until crisp. Remove and drain, leaving a few tbsp bacon drippings in the pan.
Stir in onions and garlic and cook about 5 minutes, until softened.
Pour the broth into the Dutch oven. Add the potatoes and boil until tender.
Reduce the heat, stir in the heavy cream and the cooked sausage.
Heat through.
Mix in the spinach and serve.
