1/4 cup Dijon mustard
2 tbsp honey
2 garlic cloves, minced
2 tbsp chopped fresh rosemary
1 3½ pound center cut boneless pork loin
12 slices bacon

Directions:
Directions:
Preheat oven to 350 degrees.
Mix mustard, honey, garlic, and rosemary in a small bowl and rub all over meat.
Lay bacon lengthwise over roast and secure in place with toothpicks.
Roast for one hour.
Cover with foil and roast another 10-20 minutes until internal temp reaches 160 degrees.
Remove from oven and transfer to serving platter.
Let rest for 20 minutes.
